Gajar Halwa is a classic North Indian dessert made from slow-cooked grated carrots simmered in milk until soft, rich, and fragrant. As the mixture thickens, it absorbs the sweetness of sugar and the creaminess of milk or khoya, creating a luscious pudding-like texture. Ghee gives it a warm, buttery aroma, while cardamom adds a delicate perfume.
